My frugal lunch for the day - a radish and avocado salad with new potatoes.
Every item in here has been bought at double reduced prices at the end of day from my local supermarket. Apart from the parsley which we grow in the rustic kitchen.
Cucumber - 13p per portion - used perhaps a third (4p)
Radish - Bag for 5p - used half (2.5p)
Avocado - 5p - used half (2.5p)
Lettuce - 5p - used barely any but for sake of adding up, a pennies worth!
New Potatoes - 30p per bag - maybe a tenth? 3p
So for this one salad, it costs roughly 13p. I dont know exactly how much boxed salads cost at the supermarket or even at work, but I know they aren’t as cheap…or as interesting as this one :-)
OK in the picture it doesn’t look too appetising but trust me, these fritters are fantastic! Our leftover mash (potato, fennel and sprout) with a good mix of mascaparone cheese, shaped into a fritter and cooked in a little oil and voila!
A perfect use for something we could of very easily thrown away!
One tray of pumpkin seeds mixed with a mix of olive oil and a little salt & after the baking, and they taste absolutely fantastic! What a great use of something we would normally throw away. Shame I couldn’t find any bargain pumpkins today in the local supermarket.
1 Potato Salad - 5p
2 Avocado’s - 10p
1 Pack of radishes - 5p
1 Aubergine - 10p
Have to see what recipes we can come up with a bit later…so far a radish/avocado salad is on the cards for tomorrow, with some potatoes and hard boiled eggs maybe!

Herbs growing on the windowsill of the rustic kitchen. We bought a load on the weekend from the garden center as they are having a bit of a clear out at this time of year.
They were all bought in handy grow your own packs so here we have our Thyme, Parsley, Basil, Chives, Rosemary and Coriander. Thyme and Basil are the early front runners in the growing race pushing through after 4 days!

Got round to trying the Jack Daniels BBQ rub they sent me today. No steak or ribs but some juicy burgers were just as nice. Mainly smoked paprika based and certainly inspired me to make some of my own for the next BBQ…if the UK weather holds out anyway :-)
